Ok so being the dumb guy that I am I'm trying to build up my new cross bike myself . So now I'm installing the brakes and I wonder which of the three holes should I put the brake thingy in on the brake mounts. Make sense? I like the middle one but what are these for anyway?

The 3 holes are there so you can vary the amount of 'springback' tension. I don't know what the -real- name for it is, but it's so you have some control over the strength of the spring that pulls the pads back off the rim.

Starting with the middle position is just fine. Try that, and see how you like the feel of the brake levers and whether the cantilever arms recoil back away from the rim when you let go of the lever. If it feels OK to you and the arms move back nicely, you're all set.
