My body has less tolerance for heat than anyone I have ever known so I am on an eternal quest for the ultimate summer jersey. Despite the snake-oil ring of advertisements (see http://www.cyclingnews.com/tech.php?id=tech/2008/quickspin/05-16a for a good yuk) this jersey really does seem to keep me cooler than anything else I have tried. My previous favorite was a white Craft jersey that was discontinued shortly before I destroyed mine in a crash.

edit: I suppose I should add the downsides: it holds wrinkles and the carbon imparts a cast that makes it anything but stunning, in the white version at least. However for me, the coolness factor (as in temperature) trumps everything and I love it.
