I would like to pick the brains of the resident fit/geometry experts for a moment:

I recently got a new fixed gear bike (http://velospace.org/node/9998) which fits me perfectly. I also ordered Nitto Promenade (B617, the no-rise version) porteur handlebars for this bike.

Due the the back-sweep, I am not sure how to fit this to my bike, with respect to stem length and how much of the bar I should cut off on the end. I feel like it's currently too long and looking to cut about 3" off the ends.

Most of the French porteur bars of the 1950's have the grip behind the stem but I am not sure this comparison is valid since these bikes were generally built with long top tubes.

Basically, my questions are: (1) what should determine how much I cut from the Nitto bar's ends and (2) how do I arrive at my ideal stem length considering the bars are back-swept.

Here's is Joel Metz bike for reference. I have the same bars. It looks like he is using a 12-14cm stem.
