While visiting my dad in Columbia Presbyterian Hospital, I noticed quite a few serious riders in the vicinity (saw a Spectrum!). What bike route is around there? Or is it just the insane hills?

Folks are most likely heading over the GWB to greener riding pastures ...

Use to do it every weekend I could from Manhattan when I lived there

Up RSD, across the GWB and then north on 9W to Bear Mountain (one of many routes, but a very popular one, that and the River Road which cuts under the GWB and north around 10 miles before meeting up with 9W), plenty of hills. I used to live at 157th & Riverside. Always a lot of cyclists right around there.

Columbia Presbyterian is on the route you take to the GWB from most of Manhattan. The regular bike route is across the GWB to River Road or 9w to Piermont, Nyack and Bera Mountain.
