Oven roasted tomatoes
Preheat oven to 325

Get a bunch (10 or so) Roma tomatoes and cut them in halve lengthwise

Put on an oven sheet, drizzle with olive oil, garlic, and some sea salt.

Put in oven and let them roast for about 4 to 5 hours....turn heat down to 250 to 275 if they start to blacken. They should start to look a bit like sun dried tomatoes. You are basically trying to remove moisture and look a bit like sun dried tomatoes...check on them lots and pull out when they look good or you are just hungry.

Let cool a bit and sprinkle with parsley

Serve on crostini (baguette sliced crosswise, brushed with olive oil and garlic, then toasted) with some creamy goat cheese.....and lots of wine.

You can also roast some veggies (onions, zucchini, asian eggplant, peppers, etc) under the broiler while they are cooling. Slice into serving sizes, sprinkle with olive oil and sea salt, maybe some pepper. Peels the blackened skins from the peppers and you are good to go.
