It's Hebrew.

"Shabbat" is the Hebrew word for (surprise!) Sabbath. The Jewish Sabbath begins Friday at sundown and ends Saturday at sundown (we mark ritual days beginning at sundown. Based on the "And there was evening and there was morning - the nth day" verses from Genesis, don't you know!)

"Shalom" is the Hebrew word for "peace", although it's commonly used on its own as a greeting, too. The hippies have nothing on my people, atmo...

"Shabbat Shalom" literally means Sabbath peace. In this context, it's a wish for a peaceful holiday, and a common greeting round about this time of the week.
