Hi all , new SRM user here. I have a new PCV, whe doing the zero offset before each ride, should the upper and lower numbers be the same? I have a 500 on the bottom but the top only stableizes to around 644.

Quick answer: Yes. The numbers need to be the same - and the zero offset process should make them the same.
When the zero offset is done it essentially replaces the upper number with the lower one. Since this only takes a second or two to do, most folks do it every ride after noodling along for a mile or two in order to allow your PM to acclimate to the outdoor temps.
I vaguely recall seeing a thread on the Topica Wattage board about the impact in the +/- accuracy of your power based on whether you do a zero offset or not. It made for interesting reading and certainly spurred me to make sure to do it every ride unless it was just a coffee ride.

Agreed. You need to stop your bike and take ze feet out of ze pedals to do this. No extra weight on the pedals.
The crank must remain still as well.
