why would the stock geometries for different models differ so much?

for instance, in a 54 frame size:

Stock Fierte Geometry
TT length = 53.5
TT slope = 9.0
BB drop = 8.0

Stock HSG Carbon, HSG Ti and HSG IT Road Geometry
TT length = 55.0
TT slope = 7.0
BB drop = 7.0

are there different objectives based on different materials?

Change the geometry, change the ride. The Fierte is a "comfort" rider while the HSG is a racer. Methinks the difference is less than meets the eye. Both bikes ride like Serottas. How else could they ride? And that's swell.

Or think about it in another way , both bikes fit different body or rider types. Just like dbrk said , they both should be good handling bikes though.
