What exactly do those straps do? Anyone try riding their bike without them? Dave Kirk?

Its the re-coil of the stays if your too heavy and hit a bump you may force the stay beyond its own re-coil level . You need to know that the stay is protected by a SST strap too boot . Its quite a marvelous invention that Kirk came up with , like all genius he was way ahead of his time. Don't mess with your bike and ride it first as it was intended to be ridden and please report back to us with your feelings as compared to your Legend.

Serotta 2002 catalog:

The patented 'Hors' is the world's only true performance tunable suspension road frame...Serotta DKS technology uses a patented spring unit(ed.: based on the 2003 catalog's description of the ST stay as a carbon spring I think this refers to the DKS' curved stays) with our molded silicon damper and a steel band to control the rate of compression and provide extra vibration dampening.

Serotta 2003 catalog:

The DKS allows more travel than the ST system with superb vibration damping provided by the silicone elastomer straps, resulting in a magic carpet ride. Heavier or more powerful cyclists should note that the DKS' resistance to torsional loading is more than adequate, but not quite as high as the Classic or ST models. Gram conscious cyclists should also note that the DKS system will add about 175 grams.
