Simple question for the Shimano-philes. Is it true that Ultegra 6500 shifters dont have a 6503 version and that all of them shift triple? I know that there is a 6510 but that is just a mid-year version or some such. I know the 7700/7703 are double/triple specific.

That is correct..a trip thru shimano tech doc land shows for a triple setup, using 6500 shifters, a 6503 front der is all you need to shift a triple.
As a matter of fact, when we ordered shimano shifters for a bike(yes, we sold a few), we always ordered the triple version because the 'triple' version, like 7703, shifted a double just fine with a double front der.

I know that is the same with Tiagra 4500, and I believe 105 5500, not sure about the 5500. I think when you install the cable on the derailleur, it should be on the 2 position using 2 and 3, and set the limit screw so that it will not shift farther inside than the 2 spot. Maybe it also works using the 1 and 2, limiting the travel to the 3 position. My experience, admittedly limited, is using the 2/3 set up. Surely, someone will correct this if I am wrong.

Actually, when you set up a triple shifter for a double, you use the 1 and 2 positions. With the '2' position being a trim on the big ring, like the 'trim' on a middle ring..then the limit screw to prevent the shifter from shifting to the '3' position. If you use 2 and 3, you won't have trim on the big ring of a double..and you'll have a small 'ghost' shift when on the small ring(the trim)...

This is cool. I actually have two of these set up as doubles, one pretty pristine, sitting on a bike buried in the rafters. I have 7703 DA triple shifters on one of our tandems and can use the former as replacement if the latter breaks. Was a NOS 7703 shifter set FS here recently and I was very tempted. I love the 7700 group.

First gen 9s ultegra/105 both had double and triple specific shifters, ie. 6500 had a 6503 for triple. Second gen 6510 had one shifter that worked with both double and triple.

Actually(teeny point), there is no 6503 shifter set..6500, 6501, 6510 were both..no '6503'..like '6603'..
