I have 2016+ 4-arm Chorus UT Crankset with Mid Compact 52/36 rings...can I change the rings on the crank arms to Compact 50/34?

Yes. The 4-arm has the same bolt pattern for standard, mid-compact and compact rings.

Agree.
Question though, are the rings from centaur/chorus/record/SR interchangeable?

I’ve never actually changed the rings...is this difficult?

Not really. You just need a Torx bit. And don't lose your parts.
