I'm running Vittoria Corsa G+ 700x28 tires on HED Belgium rims on my Firefly. Sidewall says minimum pressure is 70 psi or 5 bar, which is 73.5 psi. The other day I spaced out and left the house running 60 rear 55 front - brain failure, as that's what I run My Anderson 700x38 tires at. The Berto chart would have me at 66 rear, 53 front. Normally I run 80 rear 75 front. The handling seemed fine at 60/50. Is it risky to ride at lower than the manufacturer's lowest recommended pressure?

No, within reason, and your pressures were.
Did you pinch flat or bottom out on the ride?
