I cannot seem to find what I'm looking for...
A 6 degree polished stem that fits a 1"1/8 and 31.8 bar clamp
If anyone has any leads.. Looking for something to match my polished Paul seat post.

If you can live with 10 degrees? (likely even better?)

+1 on Nitto - they make some very nice stems.

As far as alloy, I'm a fan of IRD stems. They are very nice looking- as nice as nitto alloy, and cheap. Looks like that Soma. May be same thing
For brazed steel, Simworks has several offerings in 0 and 15 degree. Compass has either a 15 or 17.

Paul Boxcar, as mentioned. Comes in 7 degree for the 110, but I imagine that's close enough?
An other one to try would be the Ritchey Classic/Classic 4 axis.
And once again, Nitto. They make a bunch. (they make the simworks/compass ones)

Nice polish with that fillet-brazed look! If only they made it with a removable face plate as that is a must for me.
However, Nitto does make some pretty nice threadless stems in 31.8mm:

And of course, for 26.0mm stems the UI-21EX aka 85 EX stem

For a removable faceplate, Sim Works makes the Rhonda, a nice looking stem that also offers the Dirty Rhonda option of a built-in cable hanger for centerpull or canti brakes. The Dirty Rhonda is part of my fantasy rebuild in which I switch to Paul Racer Ms.
Cannondale used to make a nice silver stem, like on my Colnago below

I think a wrap-around clamp is much more elegant on a nice smooth brazed stem. They hold much better too.

Paul does make an attractive polish stem but it comes in only 15 or 0 degree and up to 110mm in length. https://www.paulcomp.com/shop/components/boxcar-stem/

The 110 only comes with a 7º angle.

Thanks for correction, that's what I get for not reading fully though 7-/+ is even better.

Thanks for the suggestions!
Didn't know Paul made a 7 degree stem... that's pretty close to what I'm after and it would match the seat post I'm riding.

I went through the same thing recently, and ended up with a Deda Quattro HPS (Hi Polished Silver)--Planet Cyclery was clearing them out <$23.00--only 110s left.:

It is not light though! (image shamelessly stolen off eBay)
Looks like there is a 120mm on Amazon for $15:

If you can't find a stock item, Eric Estlund (Winter Cycles) will make it for you. Museum quality and so nuke-proof, your great-grand children will have to auction it off. Website sill under construction, but check his Flickr page: https://www.flickr.com/photos/22538785@N05/

Yeah, I apologize for the state of the site. We lost it all on a forced upgrade and I'm slowly getting content back up.
In addition to Flickr (thanks for the link!) you can also see a bunch of work on my Instagram (https://www.instagram.com/winterbicycles/)(Flickr is better organized, IG is updated more regularly).
Thanks!
