I will be in Paris for a few days this week and would like to visit 1 shop before I head home. I want to see both old and new tech and high-end bikes if possible.

It's not peak vacation season yet, but it may nonetheless be a good idea to confirm that they're open before you make the trek there. Plenty of Parisian businesses close for weeks at a time over the summer.
