Having just built a custom all road with canti's and loving them, can't get over that I only saw maybe 3 bikes without disc's

I'm in the process of getting a custom all-road built with discs, and I'm terrified. First disc bike for me and I've never had anything but fantastic performance from cantilevers, so I'm thinking I must be crazy.

BUT: what a slopfest! MAN that looks like fun. "Quintessentially Belgian conditions", I'll just bet. It's quintessentially Pacific Northwest too, looks exactly like a hundred mountain bike races I've been in... plenty of chances for that in my future, I guess. (The slop, that is, not the racing.)

Just need more beer and frites at the end of my rides.

That looks super fun. It looks like my winter weather here in BC.

The guy scrambling to stay upright tried to ride around the gate and bit the dust coming back up on the road. I've done it myself!

That looks like a blast! 'Cross conditions, great setting and beer/frites... Need to find something like that out in OP's neck of the woods (not super technical, double track, fireroads..). I'm sure its out there if I search hard enough.

Road grit is considered a delicacy in Belgium

I understand your fondness for cantis, but long sloppy rides like these are just so good with discs. You won't regret it.
