What's the best method/solvent to remove bar tape glue from carbon bars, without harming the bars' finish? Thanks in advance, Chris

i use a hair dryer or heat gun to warm up the glue and just peel it off.

Naphtha is my go-to for all sorts of goo.
Odorless Mineral spirits the second choice.

Goo gone works fine.
As the others said I've had good results with Goo Off and Naphtha

Other than aesthetics (say, if you're going to sell the bars or return them to a buddy who loaned them to you) is there any practical reason to do this? IMO leftover glue can't hurt, and can only help keep the next tape in place.

Isopropanol works well for adhesive residue
+1 for isopropyl alcohol (aka isopropanol) and a microfiber towel. Most retailers sell two types - 70% and 91%. 91% will remove the residue faster with less elbow grease.
