This question is for the no mainstream users :)

Whats the difference between the CRM and the Carbon pedals??

Do they use the same or different cleats?

I have only used Keywin CRM, and not the Carbon, but I think the difference is in the material of the pedal body. Really nice pedals, imo.

Keywin USA (http://www.keywinpedals.com/collections/all) state that the CRM and Carbon pedals require different, non-interchangeable cleats:
Q: Are Keywin Carbon and Keywin CRM cleats compatible?

A: No. Only use Keywin Carbon cleats with Keywin Carbon pedals, and only use Keywin CRM cleats with Keywin CRM pedals.

The Carbon model was introduced about 3 years ago and the CRM is the model that's been around since the early 90s at least. They do use different and incompatible cleats. The stack height on the Carbons is a smidge less and the manner of adjusting for float is a little more refined on the Carbon - the axle end caps snap in and act as the float control whereas with the carbon you have little inserts that fit around the axle before the cap gets popped on.

IME, I found the float on the CRM to be a little more free when the float tension screw was fully backed off than with the Carbon.

They are both great pedals and near indestructible.

One limitation the early version of the CRM cleats had was that they allowed little angular adjustment when fixing them to your shoes. They have increased that on the Carbon cleats and introduced improved CRM cleats to increase it too. It's still not as good as a Shimano cleat in that regard so beware if you use a very toes in or out cleat position.
