I can find info on how to install but nothing on removal.
I'm guessing you just drive it out with something like a BBT-30.3 but... ?

Correct, the inside section then the outside and they tend to get banged up as they are plastic.

I use some trashed cups and a headset remover.

Pop the non drive side out first. Drive side is sorta pinched in there
When re installing the new one do one cup at a time and I use just a little carbon paste. Never try this on a bb30, trust me:)
Personally, I prefer a pf30 system

Peanut gallery is correct, remove the non drive side first. A good tool is a headset remover. Some PF30's can be really stuck in there. If that's the case, try to pop the bearings out first. It will take a little tension off the cups.
I install them with a little 603 retaining compound. It just helps the cups stay put, as PF30 has a tendency to come loose. Specialized actually recommends using an epoxy like retaining compound. I feel that is usually overkill, but if you have a PFBB that presses in by hand....I would use it.
