Could anyone enlighten me on riding possibilities, both on and off road, in the area?
Any extended stay options nearby?

Lots of riding, mostly East and South of Cave Creek for road, anywhere for off road.
Any extended stay options nearby?
How much money you want to spend?

At $199 a night, the stay wouldn't be very extended.

Any place in N. PHX/N. Scottsdale is not that far from Cave Creek.

For Mountain Bike XC trails Cave Creek Park, Phoenix Sonoran Preserve and Browns Ranch are all close by and have lots of variety. If you're riding road the Dove Valley / Sonoran Parkway through Sonoran Preserve has great desert scenery, a nice wide bike lane and a very smooth asphalt surface. It's near Cave Creek and easy to include in a loop.

Besides Bartlett Lake, there is Seven Springs (to the pavement ends, or beyond if you like), and Cow Track Estates, nothing like a few jaunts up Father Kino to set yourself straight. Also head out to Rio Verde and take the forest road to Needle Rock. (all road bike).

Stay away from Father Kino. zmud is just being evil with that suggestion.
