I forgot...is this a classic racing angle....this will be pretty flat right?..not up in the air?

Correct, stem will be about horizontal.

This quill stem on my Saluki is a 73* stem. A 72* will look virtually the same.

There are some Ritchey branded stems made by Nitto that do have a 6 degree rise. They're out there but hard to find. I have one on my Merckx.
On a separate note, I need a threadless stem at -17, where do I find one of those?

IIRC, the Cinelli XA and 1A ran about 75, and the Nitto Pearl about 70. The Deda Murex is 76.
