I have the wheel and crank arm magnet along with the sensor attached to a chain stay.

With Vector pedals and a GPS-enabled 510, do I need the magnet and sensors?

Trade-offs? Issues. FWIW I don't ride a trainer indoors.

You wouldn't need the cadence portion, speed could go off gps. Garmin has a speed sensor that goes on the hub, works great, gets ride of the chain stay mounted sensor. Looks cleaner imo

Cadence is part of the power profile that the Vector uses.
