I am going to have my older steel frame coverted over to S & S couplers.
Since I am sucha big guy i am just wondering how strong they really are?

We use them on the fr. half of our racing tandem...nuff said.
They have been shown to be stronger than the tubes if done properly.
I've never seen or even heard of one failing. Not that there couldn't have been one to fail but not many. They really do hold up.

My LBS built up a Co-Motion Triplet/Tandem/Single using S&S, you could
assemble the bike 3 ways using lots of cable splitters, very cool in
a James Bond gadget sort of way. So yes, they're way stronger
than the tubes, just think about a triplet going down hill, mass
times velocity and all that.
