As best I can tell, neither bikes nor pedestrians are allowed across the Millau Viaduct, but that would be a fun ride (assuming it wasn't too windy):

the Viaduc Millau is a fantastic bridge. Viaduc is the term used for vehicle bridge, as opposed to Pont, which is for multi function or other than vehicle perhaps. We went through there on a trip and went to the little presentation building underneath, as well visited as any museum. The French are very fond of their engineering triumphs, and this is certainly one of them. Then we drove south to the first exit and drove across the bridge going north to the toll. Then back the other way. It was incredibly worthwhile, and stunningly beautiful. It also cuts about an hour off the trip from the north (Paris) to the Med. Another cool piece of this is that the company that built the bridge gets a substantial cut of the tolls as it's payment, for 75 years. The government didnt have to fork over a whole lot, and the company was incentive-ized to both build a bridge that lasts and to build it for less money. That usually leads to innovation of a salutary sort. I recommend this as a stop on a trip for anyone in the area, particularly if you are into engineering. There is a good small inn in St George. Roquefort, where they make the cheese, is nearby. The riding in the massif central is quite good.
