Both cave Creek Road (west of Sdale road) and Pima Rd (east of SDale Rd) have bike lanes. I usually go north on Cave Creek up through Carefree. It loops around and you come back down Pima. There's a lot of traffic, but at least there's a bike lane. It's about a 40-45 mile loop. (West on Mayo Blvd, N on 56th St, W on Deer Valley, N on Tatum, W on Pinnacle Peak Rd, N on Cave Creek for a LONG way, Right (S) on Pima, nice optional climb up Dynamite and loop around Pinnacle Peak back to Pima, W on Thompson Peak, S on Hayden, W on Princess (not sure if that's the right name - it's the road that goes past the Fairmont Princess Hotel), back to Sdale road.

There are many east-west roads along the way if you didn't want to go all the way to Carefree.

Another great ride is over Pinnacle Peak and down 9-mile hill out the back way to Fountain Hills and return. It's maybe 30-40 miles each way. Beautiful scenery.

You might want to check with Bicycle Ranch - SE corner of 101 and Frank Lloyd Wright for sugggestions. They're great.
