Shimano and compatible products are widely avail. If your goal and desire is to have max. flexibility on the road than choose your bits accordingly.

1 Technically there is less dish with most hubs (2mm).
2 Some hubs don't come with Campy spline (King, Wood).
3 Personally, I like the 7800 crankset better.

fwiw, the cane creek wheels we race on
come for campagnolo or shimano. it's
not a dish issue.

With the shiftmate from jtek engineering, a lot of problems with mixing/matching Campy/Shimano are taken care of.
