flat bar speedy bike

I was wondering if anyone has a speedy cruiser bike set up with flat bars? I see that Shimano has a couple of different models of flat bar shifters and brake levers that work with road calipers. I thought it might be fun to set up a bike accordingly. If you were doing any distance and were to choose non-drops, would you choose flat bars or something more upswept?

On my wife CIII, she has straight bars becuase she has small hands and has a lot of trouble with ergo type shifters and drop bars. She has Shimano 105 brakes and is using Shimano Deore LX shifters and Avid brake levers. The setup works fine.
