i use a PI skull cap under the helmet.
http://www.amazon.com/Pearl-Izumi-Barrier-Skull-Cap/dp/B002KCHS7O

it fits great and keeps my head/ears warm in most typical bay area weather. but it turns into wet sponge on the head after riding for a while. it still seems to keep my head warm, but wondering if there is similar product with better breathing properties, still warming, that does not collect a bucket o sweat.

Craft makes a cool little skullcap type hat that fits nicely under a helmet, and covers your ears.
I like that I can pull it off without having to stop riding and shove it in my pocket when I get warm.
Then just use the dial to tighten my helmet without ever stopping.

I have this and LOVE it:

http://www.capocycling.com/apparel/accessories/caps-beanies/retro-wool-cycling-cap

It gets me through anyday above 25oF with ease. One of the best pieces of cycling gear I own.

Got it for $19 on sale @ Competitive Cyclist in 2010.

Ive heard good things about the Rapha winter hat as well, but I'm not a Raphanatic...

those more bulky hats would probably be too warm here at sea level + 3000'.

If you are talking sub forty degrees and own a Lazer helmet they mske a great winter liner that replaces your pads

It has a wind blocking "brim" over your forehead and ear flaps that attach to your helmet straps

Very warm and comfy

not surprisingly, assos makes a good one.

http://www.competitivecyclist.com/product-apparel/2011-assos-s7-fugucap-10039.368.1.html

not surprisingly, it ain't cheap, but given how miserable winter can make your ears, it's money well spent.

+1 on it. Got it on ebay about 1/2 off so it was worth it but even at 80, if you ride outside below 25 it is money well spent.

Caroline at Little Package Caps does a great job. Here's a sample:

http://shop.little-package.com/shop/113

If she doesn't have your size/color, she can make you a custom one. I have two of the wool earflap caps and love them, though I rarely get a chance to wear them here in so cal.

I second the assos fuguhelm. Spendy but worth every penny! I wear it in 35 deg and rain to 15 deg and snow. Wicks, is wind and water resistant.

i've got a few of these from Castelli. they work well down to the low 30's, and are reasonably priced.

I like this one more than the P.I. It is a good bit warmer:

You have the version made of barrier fabric...increased wind blocking, decreased breathability. PI makes this same hat using transfer fabric...less windblock, much better breathability. If you like the fit of your current hat, try the version with transfer fabric.

This one:

http://www.backcountryedge.com/images/PRODUCT/medium/outdoor_research-alpine-hat.jpg

Old style Outdoor Research Alpine Hat. Windstopper. Fold the sides down to cover as much of the ears as needed.

I found that a bunch of my mountaineering gear works great for cycling.

For what it's worth, I still dig a kerchief. If it's in the 40s, I can tie it up like a doo-rag; if it's warmer, I fold it up in a little rectangle and let it pad my brow. It's a great thing to wipe my hands after a flat or a dropped chain. If the ride's long, I pack a second one. When the first gets soaked, I wrap it around my bottle and it keeps it a tiny bit cooler as the sweat evaporates.

I found this at TJMaxx for $10 and it's good from 25-45 degrees. Super light with a touch of fleece. I have a windproof liner from another company but I can't hear a damn thing when I wear it.

i have the gore one and i like it alot. the windstopper material does a really good job of blocking the wind, and therefore cutting most of the cold, without overheating you. i have the gloves and a cosmo jacket, too, and have been riding that way into the 20's without being too cold or too warm.

These are my favorite. They work well and hold up with frequent washings.

I have a North Face wind block hat with flaps, but it mutes wind/road noise more than I am comfortable with.
No ear flaps, but great full ear coverage from:
1) North Face's very stretchy bambo hat ($20) that stretches below my ears. Bambo wicks well.
2) Ibex Meru. Very warm wool-it also stretches below my ears. $25.

I got one of those free Icebreaker ones they were giving away w/ all their orders and it's great for under helmet wear. It doesn't have "ear flaps", but it's deep enough to not need it. Very thin for being dual layered, good amount of warm for 25-50 degrees (and maybe even lower, it hasn't been that cold this winter yet though).

I just use a ski helmet when it gets that cold. Looks goofy, but so do bar mits and lake winter shoes.

I use the Sugoi Wallaroo 290:

http://www.amazon.com/Sugoi-Unisex-Wallaroo-Cycling-Size/dp/B002MZSQ34/ref=sr_1_14?ie=UTF8&qid=1325568575&sr=8-14

It's a little bulky, but very comfy. I wear it off the bike all the time, as well.

I also own the Capo, which is very thin and the "brim" has no stiffener.

I also have the Icebreaker beanie which is thin, but also warm/comfy.

Ibex makes a very nice thin merino wool item that works well, wicks well.

like others have already said, the ibex meru hat is awesome.

it's also a lot less awkward looking if you're not on a bike.
