I cant seem to find anything with more range than a 13-26. Is this the biggest option for campy 8?

There's a 28; they show up on ebay from time to time. By that I mean that the individual cog shows up; it's even rarer to see a full 13-28, though I have once or twice in the last year. Dunno if there's anything bigger directly from Campy.

12-23 and 13-26 are the two made by Campagnolo now. As mentioned above, there were some 13-28, made over a decade ago(9s started in 1997) around but scarce.

I bought one of those cogs a few years ago. It required a minor hacksaw and file modification to adapt the old (aka alphabet) Exa-Drive spline pattern to the later 8 speed Exa that had one key spline wider than the others. It worked okay, but was a a clumsy step between the 23 cog (from a 13-26 cassette) and the 28, even with the B tension screwed in. I made that up for a ride through the Alps, but never ended up needing it, so now I'm saving it for when I get older. I might not be able to afford retirement, but at least I'll have the cog for it!

Didn't Campy make a MTB group in the past? 8spd Mirage?
If so, I'd assume if you could source something from that era,
that it would have a cassette that would have a wider range, possibly up to 29, 30, 32, 34, etc?
Of course, you'd also need to source a long cage derailleur, but the old man in me seems to recall rare Campy MTB parts from the 80-90's.

Another option would be to check out Miche & other Campy compatible cassettes? I dunno, I'm no Campy expert.

They did, and it was up to Record quality. Every now and then you'll see the MTB shifters go for a zillion $ on eBay. It was very hard to find an unused cassette though. I looked for months on eBay and elsewhere, and I was happy to find a single cog!

In 1992 you could buy:

12/13/14/16/18/21/24/28

13/14/16/18/20/23/26/30

13/14/16/18/21/24/28/32

1993 was the last year for the 28, 30, and 32.

28 PN: 7286988
30 PN: 7286890
32 PN: 7286852

So 8 speed cogs exist from 11-24, plus 26, 28, 30, and 32.

First postiton cogs range from 11-14.

Aluminum Super Record cogs were available from 13-24.

Here's a pic from the 1991 catalog of a 14-32:
