What about helmets?

I have seen no photos of anyone wearing 1980's helmets. On the other hand I have seen one or two hairnets. Not sure if they were here or Europe. Probably Europe.

I saw a couple of old Bell Bikers, but most everybody (me included) had modern noggin protection. If they made that against the regs (and they most emphatically do not), I would not do the ride again. I'd still go for the bike porn, and maybe volunteer, but not sign on for the official ride. My skull may not encase the greatest brain in the world, but it's all I've got.

Campy triples went down to 36 tooth. My granny gear on my tandem was 36-24. I was a lot stronger and lighter those days, it really was a granny gear for me then.

I know a lot of people that did extensive touring on a 42-28 low gear, but if you were sane about it, the TA crank was fine. I guess that's not sexy enough for a lot of people, but it's not like you really need to go to MTB derailleurs.
I still have a Regina CX Mountain Kit in the garage. It includes cogs up to 34.

I think, most of the time, I still prefer DT shifters to Ergos or STI's or whatever. The one thing I really DO NOT care for on the older bikes is the brake hoods. Maybe it's age but I have to tell you, I really notice how skinny and uncomfortable those old hoods are nowadays. My Reynolds 531 bike that is built with all Campag and DT shifters has Cane Creek levers on the bars - much more comfy.

As to one of the comments upthread about old pros - I have quite a few that live around here and I ride with from time to time. By and large if they have the choice of a 100 Km ride, or a 50 KM ride, they take the 50 Km ride. Organized events they usually take the short routes. As one of the guys said to me one day - I've ridden a lot of miles, I don't have to prove anything.
