Recommendations: Coupled Disc Cross dream...

Spurred on by plans to visit Belgium in the spring, and having got rid of my Crux, I've been thinking a lot about my ideal do-anything bike.

Cross - large tire clearance for gravel, cobbles, mixed-surface rides
Coupled - no more $400/trip in fees
Disc - rode Grinduro on a Sram 1X Hydro Santa Cruz, f*cking LOVED that

I'm wondering where y'all would go if you were in my shoes. Custom steel, Optioned-out Moots both seem like options, but maybe it'd be better to buy something and then just have the couplers installed?

Can afford new but would rather not "burn money".

What about something a little faster, with a more horizontal tt?

Don't think there are many stock options out there. It's not a large market for something this specific.

I absolutely love mine, have it paired with a wound-up fork and it is a fantastic ride. I went with a "cross" style but road geometry with a lower BB and canti's.

Sounds like a dream trip. Ever thought of purchasing once there, new or used? Coupled or not (prob not) then you you could have shop ship home a nice souvenir.
