I'd go 6800 throughout (incl wheelset) and Deda zero 100 grey finishing kit. Honestly, 6800 is so sweet, shifts and brakes are so light and smooth and the build quality just feels excellent. An Ottrott is more of an Aston Martin than a track day special car - you don't need 9000 / Red / SR on it and you don't need more than 6800 wheels on it. Trust me, I have an Ottortt as well!
