I bought the Park tool for trimming the housing and inserting the barb. Probably a bit overkill - this is a pretty simple job and cheaper tools should work fine.

FWIW, installing new Shimano levers and calipers recently, I merely trimmed the housing, installed the olive and barb, and everything worked perfectly without any bleeding necessary. If your parts are not pre-bled, you'll have to bleed afterwards, but if you're familiar with that, nothing on the cutting side makes the job any harder.
